I had written post about Boba Fett's compassion some years ago. But it's largely how Star Wars generally portrays characters: children have the capacity to be kind, empathic, etc.
Han Solo is no exception, so his portrayal in SOLO doesn't bother me--it's on brand.

I don't have the gif on me any more, but Boba's first instinct seeing a girl in a box tumbling out was to rush to her and say he'd help her.
It's a Lucas/Filoni thing that boys start out as little would-be heroes.
It's possible they don't see it as interesting either, to show a character become slowly more cynical.
I don't think we've ever gotten any stories showing how Boba went from Krayt's Claw to the taciturn, cynical man who wears his helmet all the time.
Because Boba had a heroic streak too.
He got ground down over the decades. And he has that pessimistic streak even after the OT. His life is a series of getting hopeful, getting set back, pessimistic, running from his problems, then bouncing back triumphantly.
There's others in the comments saying the same thing, but my impression of Han since the 80s was that he wasn't a born cynic, he had become one over time with his work and the Empire.
SOLO represents that earlier Han.
Luke reminded Han of the more heroic youth he'd been.
This is how I've always seen it. Luke reminded Han of the boy he had been, even if only in glimmers. The Han we see in ANH had grown increasingly cynical over the years.
