Thanks! Good croissants start with good butter so I used Kerrygold to laminate the dough with. I mostly followed Claire Saffitz’s recipe (reduced it 20%). The most important part is keeping the butter layer cold so it doesn’t mix into the dough. I chill in freezer for ~20 min after each fold
