Well TSA sucks at it, always has. Remember how we all hated TSA, on both sides of the aisle? Caught letting weapons through and caught stealing meds. I'm not for airlines doing security screening but I think airports could do as well as or better than TSA as long as good standards were implemented.
I'm curious what miso soup, potato chips, bagels, and bbq sauce were considered the unrestricted version because those things are usually vegan-friendly already, unless they are flavored versions like sour cream and onion chips or honey bbq sauce. Seems like that added a little cost unnecessarily.

A couple things can add umami to a dish: MSG is easiest, liquid aminos, marmite, a worcestershire sauce w no fish, mushroom powder. There's probably more I'm missing.
If you can handle gluten, seitan is great for protein and very versatile. Powdered or homemade. And yeah I was going to say sweet potatoes and white potatoes, you can do so much with them with other veggies and mushrooms!
