I always really liked making custom menu / battle systems / other assorted bits and bobs with RPG Maker 2003, where you only have access to event scripting and can't actually do any programming. Making something that visibly looks like old RPG Maker but is doing stuff it was never meant to is fun.

The last of my possessions was presented to me in a pile marked for discard. This has been painful. Seeing everything I've owned and the stories they had go into a dumpster on my lawn is... painful. And for anyone who knows my life... I've endured a lot. This is up there. — 💙
Wild Arms on the PSX. No other game had me so quick like this. Cold open, select a character. Bring all the choices together. And then Chaos! Action! Suspense! And what is left? The title drop. The game has only just begun. It has flavored my love of complex title drops and interstitial music.
Time for a deep cut. Who Framed Roger Rabbit on the NES is an amazing game. It has rogue-like elements to it, and despite the final boss being an absolute pain, the game is fun, at least to us. Also the puns for the weasels are amazing and still hold up.
Megaman 6. While we speed ran MM4-6 for a long time, 6 was always our favorite. The broad variety of enemies, along with the weapons present and of course the music! We used to have Plant Man as an alarm theme. And of course Jet and Power were great twists on Rush that we think deserve a come back.
Chrono Trigger is high on the list. It was one of the first JRPGs that we actually 'got' and fully understood what the plot and mechanics were. The characters, mechanics and story will always have a spot close to our hearts. This too has a randomizer we play casually because it is more fun game.
Super Mario RPG: Legend of the Seven Stars. It is associated to some rare positive childhood memories and was so loved we learned the Randomizer and even placed 3rd in a community speed run. The remake was an absolutely darling homage and served to reintroduce it to so many new players.
