Remove from oven and sprinkle 1 Tbsp chopped fresh thyme, 1 Tbsp chopped fresh parsley, & 1 Tbsp orange zest.
Squeeze the juice from 1 orange over sweet potatoes.
Return to oven and roast for another 10-15 minutes.

You can substitute lemon/lime zest/juice if you wish.

Since it's almost Thanksgiving, it's time to post my citrus roasted sweet potato recipe.

Peel & slice up 3-4 sweet potatoes, enough to fill a half sheet pan.
Toss the potatoes in olive oil, fresh crushed garlic, salt & pepper & spread them on the sheet pan.
Oven roast at 400 °F for 20 minutes.
