Elden Ring is also probably the most bang for your buck due to the large, open-world nature of the game. Honestly, if you don't care where you start from, Elden Ring is one of the best options. Going back to any older Fromsoft Soulsborne will feel a bit limiting, though.
It honestly depends on a few things.
If you have access to a PS3 or PS5, Demon's Souls is pretty much the first of these games and is a decent launching off point. If you don't, however, Dark Souls is an equally good option.
If you like a bit more open-world freedom, however, go with Elden Ring.

I generally avoid blocklists as you can't always know who made them and for what purpose.
