Проблема старих браузерів була актуальною років 15 назад. Зараз у 99% користувачів свіжі браузери (з мого досвіду). Тому avif вже можна. На роботі ми доречі теж обрали webp, все конвертуємо в нього. Навіть анімаційні gif, бо webp підтримує анімацію (як трохи пізніше виявилось).
Якщо підтримка старих і екзотичних браузерів тебе не турбує, то вже можна.
