I think a lot of your issues would be solved by strictly following some recipes to start — sourdough can be finicky, especially with the prove & sticking to a system will give you a better idea of what the base issues might be (as then you can troubleshoot from there).

Are you following a recipe? It’s super helpful to start with a well-written/math’d out recipe, which will give you all the right percentages & also walk you through a good technique foundation.

Just unloaded the kiln & now have SO many Little Guys to glaze (but first, one more quick batch of mugs for a second, smaller bisque fire, because I’m trying to figure out a good production schedule now that I’m doing markets!!!!!!!! Agh!!!).
Also it is SUNNY and 4 DEGREES CELSIUS and I GOT AN ICED COFFEE TODAY!!!!!!!!! It gets cold again tonight, but I was having the best time not wearing a coat and basking in the sunshine!!!!!!!
