as they freeze, so that it's just loose crumbles. then I just grab some and toss them in with random rice/stir fry or whatever other dishes that could stand a little extra protein. I deliberately cook them kind of plain or neutral so they'll go in with anything but you can add taco spice or whatever
although technically the most frequent red meat I consume, and this might actually be more useful to you, is I brown up a package or two of it at a time, with maybe a little salt So that I just have a bunch of cooked ground beef crumbles. I freeze them In a Ziploc, squishing them around a little bit
insides. finally I usually don't eat the entire steak at once. most often I let it cool off entirely in the fridge and then cut off thin slices and pan fry for like a minute until they are heated through and up to like a medium/medium well.
I pull it a little bit below the done temperature I'm looking for (I like to aim medium rare) And then the trick is to put it in a bowl and cover it and let it just sit for like half an hour while the residual heat continues to cook it and it's slowly comes down. yields a nice crust and tender
for something more steak like I like a ribeye (with a light dry brine, although I usually do that for the other stuff as well) In the air fryer. I usually use a probe thermometer, Hit it hard at 400 (after letting it sit out and come closer to room temperature for like half an hour first).
I like braising cuts like Chuck roast or shank (I particularly like boneless shank but that's not available as many places.) I usually end up tossing it in with onions and some red wine and some broth/herbs and just low and slow cook the fuck out of it until it is fall apart soft.
It really wasn't that bad.
The one that I have has like five little clicks to adjust exactly how deep it pokes and it took me a minute to dial in exactly what depth and pressure is the minimum needed to give me a nice fat drop, (It sucks to poke and then squeeze and it's like you hurt me for nothing!!) but once I did
outer left pinky, then inner left pinky on the next stick, then outer left ring, inner left ring etc making my way across both hands and by the time I made it all the way back around to outer left pinky It hadn't been stuck in days, so it hurt less.
