This may be controversial. Instead of parboiling or steaming potatoes before roasting, I've started microwaving them. Two minutes, then flip them over for another two. A lot quicker and less to clean up, and they roast just as perfectly: crispy on the outside and fondant on the inside.

This story reminded me of when I was in a supermarket in the Virgin Islands with my mother in the 1970s. Mum heard what she thought was a Cork accent from the next aisle, and excitedly ran around. It was a local.
