In my adult lifetime, birria has gone from obscure stewed goat meat you could only find at the jankiest, most authentic taquerias to a fusion cuisine base inserted into ramen, lasagna, and the menus of great (often non-Mexican) restaurants.
It's almost never goat anymore.
