Made with tofu, orange bell pepper, cherry tomatoes, garlic, lemon juice, basil, red pepper flakes, turmeric, thyme, salt & pepper. Wrapped in a tortilla.
It was actually really good! A few seasonings can really enhance tofu. Easy to make too.

It's also the 30th anniversary of my favorite Mario game of them all, Super Mario RPG.
I loved that game: the story, the characters, the humor, the gameplay variety, the puzzles, the graphics, the Easter eggs, so much to cherish.
This week's recipe is carrot cake.
Cake made with flour, carrots, coconut oil, coconut sugar, brown sugar, applesauce, milk, walnuts, baking soda, baking powder, vanilla, cinnamon, ginger, nutmeg & salt. Frosting made with butter, cream cheese, powdered sugar, and vanilla. Absolutely scrumptious!

Made with olive oil, tempeh, heirloom tomato, red onion, yellow & green squash, garlic, red pepper flakes, parsley, salt & pepper.
The tomato was the star, added lovely flavor to everything.

Took a lot of steps to prepare, including shredding the zucchini, forming the kofta, blending the cashews for the sauce, and putting it all together, though the end result was delicious!
This was also my first time cooking with a cast iron skillet for that homely cooking feel.
This week's recipe was a complicated one: Chandra Malai Kofta.
Made with chickpeas, zucchini, onions, peas, almonds, bread crumbs, cilantro, coconut oil, tomato paste, garlic, ginger, broth, cashews, coconut milk, curry powder, garam masala, cumin, salt & pepper. Served with basmati rice.
I'm excited to announce that I'm headed to Eurofurence later this year! I've wanted to go to the convention for years and finally making it happen.

This week's recipe is Italian inspired, in honor of the Olympics taking place in Italy. It's called Lentil-a-roni, made with Fusilloni pasta, lentils, onions, blended cashews, tomatoes, broth, garlic, thyme, salt & pepper. Topped with some parmesan. Very tasty!

Why on earth would you use robots in this day and age with people antsy about AI and robot takeover? Most tone-deaf ad in a long time.
#2 Liquid Death Exploding Heads
It was memorable, but not in a good way. I found it unsettling and creepy.

#3 Worst: Skittles
I didn't find it funny at all, just upsetting that this weird creature is held against his will.
#1: Good Will Dunkin'
Sentimental, and maybe the most impressive celebrity line-up for an ad.
#2: State Farm Halfway Insurance
I'm a fan of both Danny McBride and Keegan Michael-Key. Their antics are plenty to carry the ad.
#3: Lay's Farm Ad
Made me tear up, and I enjoyed the arrangement of "Somewhere Only We Know"
#4: Pepsi with Polar Bears
A devious way to turn a competitor's mascot against them, and a nod to last year's viral moment. Points for cultural relevance.

#5 Best: Pringles
Didn't really make me wanna eat Pringles, though I like Sabrina Carpenter and it was cute.
