ALSO god like the whole point of carbon steels is that they make sense in a restaurant. They keep their edge for a long time and they're easy to sharpen. thats helpful when you are using a knife for 40 hours a week and sharpen it at least once a week. it makes ZERO SENSE to own one in the home imo
now that fancy chef life is behind me, my favorite knife to use at home is a Takayuki TUS I got for much cheaper than they are now and a Chinese chefs knife I got like 30 bucks. Find a knife that brings you joy
also shoutout to all the Chinese chefs using $20 Chinese chef knives/cleavers that would put a michelin chef with a thousand dollar petty knife to shame

FINALLY if you are an org who's like "oh masking as a con is impossible" you're wrong. Everyone masked, there were hepa filters everywhere, people tested before coming. i'm sure it wasn't easy or perfect but the priority meant I knew that qgcon and other attendees cared about a collective safety
at qgcon it was the opposite. i tried to stay far away while people were playing. I shared empathetic stares and shrugs afterward, we didn't need a conversation to know it was a shared experience. so I defaulted to giving the player space instead of being compelled (or asked) to explain myself
