Yeah as a very casual Switch user I'm a bit sad that their impressive retro catalogue has a monthly fee. I would love to buy a handful of historical games that I never played before, but the subscription model is really not attractive for me.

It's a really cool point because my most beloved games over the years had little replayability (or at least, for me). Stuff like Subnautica too. It has an ending and you feel great closing the book. Open ended survival games don't give me that.
Speaking as someone who is on the deduction drip feed: this is an excellent point. More <12 hour games with 0 replayability, please!

No hit needed, sure, but building upon your first game only makes sense if was remotely successful. That's the biggest challenge for most.

I would publish on Steam regardless, but itch is sympathetic and you could use it as a main platform to redirect people to.
Both platforms rely on external promotion, so I think it's more likely that you'll have few sales on Steam (and nothing lost) than lots of bad reviews.
