I am soup queen and can make an unctuous soup, and this when cold is so thick with collagen it’s practically a gummy bear, but the flavor evaporated. I’m so disappointed. But, eager to try again. Oh no, soup day sequel!

I’m so disappointed. I’ve only done tonkotsu once before but it turned out good: thick, white, creamy.This, there was a marked difference between day 1 and day 2, thinned. I think splitting the boil changed it/weakened it, but how?? Anyway. Gonna use this for shabu broth, gonna attempt again soon.

I hate to admit this but I need soup advice! Tonkotsu started good, but in an interest of not staying up late I split the boil: I cooled it down, fridged it, and restarted the next day which I think may have ruined the creaminess it started with. I’ve had it a few times at the Gilroy garlic festival but it was always strategic: get the ice cream first because if you eat it after all the other garlic dishes you try at the fest, it will just taste like vanilla in comparison.
