Broadly I assume grocery store apples are going through the same thing most other produce is - longer times in warehouse storage, lower quality in general, etc

Honestly we generally avoid grocery store apples - we stick to local orchards unless they're totally out of season. If you can't get to an orchard farm stand, a local co-op may carry some!
