Popcorn cookies! Made with ground popcorn and freeze dried corn powder in place of ~half the flour, stuffed with popcorn custard, then topped with miso caramel and popcorn-masa harina streusel and baked. Then the bottoms get coated in corn ganache and pressed into popcorn powder.

First cake in more than a year due to family health crises this past year. It feels good to bake again. It’s layers of graham cracker cake, and between the layers are graham cracker buttercream, coconut cream pie filling, graham cracker pie crust crumbles, and spiced white peach burnt honey caramel.
Here’s hoping Apple picks them up. (It’d be a big draw and hopefully draw more attention to their other excellent children’s programming!)

Nice! I don’t use natural colors often, but I love the earthier tones they tend to create. I usually use a smidge of a color on the opposite end of the color wheel to sorta brown everything up a bit.

Thank you so much! I think my hands have resigned to the fact that I’m going to torture the dickens out of them so they’ve given up resisting. (The Thai cake, on the other hand, made me cry at least twice. Not from hands cramping, but just because it was a nightmare to get the ganache to take shape)

My favorite go-to is Klatch Coffee. Especially their Belle Espresso, and my personal fave, their Sumatra Mutu Batak (which is so interesting—the “bell pepper” note is definitely there, but I think I’ve only ever noticed it when I made in an aeropress. It’s a unique oddity but also super drinkable)
