Deana holds a slice of sourdough she has just cut from a loaf she baked. Her hands form the familiar heart shape, but the slice of bread sits between them instead of her fingers completing it. In the crumb there is a large heart-shaped hole, naturally formed in the open structure of the loaf. The crust is dark and well baked, and the crumb airy and irregular. The slice lines up neatly with the gesture, as if the bread itself is returning the sentiment.

Today’s sourdough revealed a heart in the crumb. I will take that as approval from the starter. 🫵🏻ــــــــــــــــﮩ٨ـ❤️️ #alveoli
