Carbur’s Restaurant in Burlington was a childhood favorite. Can’t remember any particular dish, but it was always so much fun to go.

The Red Onion sandwich at The Res Onion in Burlington, Vermont. Turkey, smoked Gruyère, sundried tomato aioli, and thinly-sliced Granny Smith apples, on inch-thick slices of homemade honey-oat bread and toasted in the oven. Technically Red Onion still exists but the sandwich isn’t as good anymore.
Fu Jin’s crispy fried eggplant on Hawthorne in Portland. I’m not mad; they put their kids through college and retired on their own terms. I’m not too mad.
Chow in the Castro: Thai lime chili noodles for dinner and ginger cake with pumpkin ice cream and caramel sauce for dessert. My partner waited tables there and would sometimes bring half of her shift meal and milkshake home.
Their French onion soup was the best I ever had. This place oozed 2002 LA like few other brunch spots could (Fred 62 you can eff right off with your gimmicky toasters)
A good start.
