Sounds like underlying quality issues with the pages, quite often changing stuff on the page triggers a recrawl.
We had old pages that got linked spammed, the pages only dropped when we altered a small section of the page HTML, thus forcing a recrawl and IMO we got reranked and downgraded
If you don't want to be listed in the plagiarism melting pot that is AI Overviews, where you have a one in a million chance of getting traffic, you can opt out and have zero chance of getting traffic
100% convert to markdown... just ignore the fact that engineers have been building crawlers to parse HTML since 1993
