I think the best way to picture AAA game development is "glorified office job". There's so little room for improvement as most things are settled and discussed only by 4/5 people. Doesn't help that if you try to fight that you'll just probably end up angry

I think it's probably true that software tends to look like the organisation making it because a lot of software is a resource hungry mess that barely does anything & a lot of games barely squirt out the minimum acceptable amount of blurry frames while looking the same as better made last gen stuff
