When I say a boatload of potatoes, this is what I mean.

A gluten free yellow/white cake in a glass baking dish that has lime jello poured over the top.

The cooled jello’d cake covered in green whipped topping.

Final product: cooled and frosted cake decorated with 5 dried lime slices.

One #glutenfree lime jello poke cake complete! Topped with coconut whipped cream that I stirred a few drops of green food coloring into. Dried lime slices on top (so there’s no questioning what flavor green it is).

A roundish loaf of gluten free Irish soda bread, full of plump raisins and braised with melted butter.
