Lightly degassed, spread the dough, then the cinnamon sugar, and then rolled it up.

Since there have been a few skeptics regarding the suitability of some AP flours for bread, I made a chart of common US supermarket brand flours and their protein contents. I consider the cutoff for minimum protein content to make decent bread to be ~11.5%.
