The article claims we should salt stainless pans with kosher salt and scrub it in, to prevent sticking. I haven't used a 'non-stick' pan for decades. I don't like them at all! I only use stainless steel for eggs… and plain or enamel coated cast iron for other dishes.

Before reading this, I'd say the "big secret" is simple: BUTTER and the right temperature. For omelettes I set my induction cooktop at 6 then lower it to 4 after folding the eggs. This works flawlessly for me.
