You are absolutely on base here across almost all of new Trek.
The Sisko episode was an example of how great Trek can be, and then most other episodes are NOT that. It's such a bummer.
I feel I come across as 100% down on the new stuff but I'm not. Just disappointed at shortcuts.
(and that's not even talking about the terrible lighting, so few shots of the hero ships, terrible lighting, getting rid of the transporter rooms in the future, terrible lighting, and holographic screens)

With Starfleet Academy, it's more of the same.
Most episodes will have a good or great moment, but at the same time ask the viewer to make some large conceits to make a plot point work (USS Athena has no crew; security on ships have no cameras unless they do; etc.).
I gave Star Trek Disco/Picard/SNW so much benefit of the doubt on things that didn't make sense, expecting them to come around by the end of the season and explain obvious logical problems.
Picard and SNW broke me of that. There is so much "WTF?!" writing and I feel like all I do is complain.

Some of my favorite flavor text in Warcraft comes from Timekeepers during racing events.

I did a rewatch recently and I still found enjoyment in the show overall.
Sure the character of Jayne had some funny lines or interesting moments, but there was not one time I saw Baldwin and didn't think, "Asshole."
Oh. Baldwin is coming back too for whatever this Firefly thing going to be. OK. I guess here I was thinking we deserved something nice for a change.
