Today was supposed to be day 17 but I've had to call out sick. Today I will make some calls to talk with my doctor about chronic pain and fatigue.

Had another really long day. I'm trying my best to move quickly. Chronic pain is a bitch. Glad to be sitting. My workday started at 4 am and ended at 3. I need to get my ass in gear tomorrow. The rest of today, I sit. Someone suggested icy hot or lidocaine patches. Ill give that a try. Stretch kids!

Day 14 of being a baker. My last workday was Thursday and it was 12 whole hours. I don't know what happened but I'm determined not to take that long again today. Wish me luck!

On my way to get my knee checked out. Last September I fell skateboarding and broke my kneecap. Knowing they couldn't do anything for a broken kneecap, I chose not to go to the doctor. What I didn't know was I had torn something along with the break. Now 6 months later my legs give out at random. 😢

I sure am glad I get to sleep in till 330 lmao

We cut it into sections and preshape to let proof overnight. We put it in plastic wrap with some extra room for expansion. the next day the someone takes the dough and flattens then layers it with butter and shapes it into croissant shapes which the morning baker then takes and bakes at like 1 am.

We let ours proof overnight in the fridge. Idk if that helps
