Two plates of food with knives and forks. Wanted to stuff morels with a mixture of morel stems, porcini paste, mushroom-infused UHT cream which entailed me using a piping bag for the first time ever. I discovered that stuffing morels with a piping bag is a LOT of fun for someone with essential tremor, like me. @ollioil.bsky.social had suggested roasting Jerusalem artichokes, smashing them up then roasting them a bit longer, so that's what I did with the veg that I roasted today. Worked well, thanks Olivia. Morel sauce was the rest of the mixture that I had stuffed the morels with, just a few more morels added then heated through in a pan, not too hot because I didn't want the cream to split. The halibut was poached in white wine, white wine vinegar, lemongrass, tarragon, coriander seeds, star anise, bay leaves and I'll use the poaching liquid to make a different sauce tomorrow.

A website that I used to check on the differences between pink, green and black peppercorns said that green peppercorns tend to have a short shelf life so be careful to check the date on them. October 2028, so a longer shelf life than the pink peppercorns :D

Yes, this is the first time I've peeled them but I didn't throw the peel away. Apparently most of the goodness is just under the skin.
A lot of recipes for roasted Jerusalem artichokes say to halve or quarter them but I think I'll leave them whole next time π
