Absolutely. We just started our final unit and it's largely Chromebook-free. I was transparent with my students that I want them to demonstrate and learn skills in a different (non-digital) environment - it helps the skills be transferrable and adaptable.
And it's wild to see how when you take out the stack of paper slips and highlighters the novelty meter goes through the roof. It has "we're going to the computer lab today" energy.
