## **Technical Challenge: Microwave Victoria Mug Sponge**
**You have 30 minutes.**
Make a light sponge cake cooked in a mug, removed and sliced horizontally, filled with whipped cream and raspberries, and decorated with frosting.

### **Ingredients**
- 4 parts All-Purpose flour
- 2 parts Sugar
- small amount Baking powder
- 3 parts Milk
- 2 parts avocado oil
- small amount Vanilla extract
- Whipped cream (provided)
- Frosting (provided)
- Raspberries

### **Method**
1. In a bowl or mug, combine the dry ingredients. (hint: don't fill the mug more than 2/3 full)
2. Add the wet ingredients and mix until smooth and lump-free.
3. Pour the batter into a microwave-safe mug, allowing room for rising.
4. Microwave until the sponge is risen and just set in the center.
5. Carefully remove the sponge from the mug and allow to cool slightly. (you may need to use a dinner knife)
6. Slice the sponge horizontally into two even layers.
7. Fill the center whipped cream and raspberries in correct proportion.
8. Replace the top layer.
9. Decorate the exterior of the cake with a smooth layer of frosting.
10. Present your finished sponge for judging.
**Notes**
- The sponge should be light, not rubbery or dry.
- The cake should hold together when sliced and filled.
- Decoration should be tidy and appealing.

- Flavor balance
- Neatness of slicing and filling
- Overall appearance
- How closely it resembles a classic Victoria sponge
