The prepared dish! Two baked enchiladas rest on a bed of chorizo rice with poblano pepper, topped with browned Monterey Jack, a dollop of sour cream, and fresh-cracked black pepper.

The recipe card! Greek-Style Lamb Meatball Platter with Pita, Rice, & Cucumber-Feta Salad. Serves 2. Cooking time: 35-45 minutes.
The prepared dish. Five shawarma-spiced lamb meatballs rest on a small pond of mint tzatziki. Sharing the high-sided dinner plate is a bed of lemon-currant rice. Chile romesco sauce and a lemon wedge can adjust the heat level to taste. A cucumber, tomato, Feta, and marinated shallot salad is on the side.
Today’s #BlueApron Bistro! Relatively easy to make, just lots of ingredient prep. I’m happy with how the meatballs came out!
