A painting of a bustard (Otis tarda). This is clearly not fifteenth or even sixteenth century - it dates to 1731 - but it's the best I could do at short notice. The painting shows the bustard, a long-necked gamebird, standing erect in the foreground. In front of the bird, we see stylised grass while a coulded sky and stylised mountains fill up the background. On the right, a scroll proclaims that this bird was caught by one Martin Gaßner on 26 January 1731, an uncommon event commemorated by painting it.
Today's recipe is for turning a bird's neck (specifically, a bustard's) into a kind of sausage. Fifteenth-century cooks were enterprising people.
