Tipsy Tribe **© Hannah Casier** | Tipsy Tribe As the latest brewery with a taproom regularly open for everyone, **_Tipsy Tribe Brewery & Distillery_** was due a blog post for quite a while already. We finally made it to the inconspicuous garage door in Koekelberg, with behind it the sometimes very alcoholic—but tasty—results of Daniel and Aylin’s labour of love! * * * We specified “very alcoholic”, because _Tipsy Tribe_ isn’t just a brewery, but a distillery as well. It’s actually the only distillery in Brussels actually making their spirits from scratch! Dan brews the ‘wash’—which basically is a simple beer without hops—just like he brews his beers and in the same kettles, and as much as possible from locally sourced grains. He then distills the wash in the solar powered, beautiful and impressive copper still, to become gin, vodka, liqueur, or even whiskey! Yes indeed: there are some oak barrels patiently waiting, filled up with a spirit that may soon be served as the first real Brussels whiskey! ### Taproom Quiz As much as we like a whiskey, it’s the beer that drew us in! The taproom is on Thursday open until seven—unless there’s a ‘pub’ quiz or a _Mario Kart_ championship, then they’re open a bit later—and on Friday and Saturday until nine, so you can perfectly start your weekend shenanigans at _Tipsy Tribe_. There are usually four of their beers available on draught, and everything else they currently have on bottle. Not surprising considering Dan’s American heritage, quite a few of those beers are hoppy IPAs, but German styles like _Kölsch_ style beers and _Helles_ , also feature prominently. And you may have already tasted their crisp rice lager _Horang-i_ at _Seoul South Station_ , the Korean fried chicken place we featured on the blog earlier! In addition to making chacha, a Georgian spirit, I'd like to try to make whiskey. I was reading a little about what corn to use so I can try to figure out if the corn varieties grown in Georgia would be suitable.

I also just discovered that popcorn can be used to make whiskey!
