Here’s an assortment of recent pickles in their final forms. The carrot-onion-pepper-cauliflower mix became a salsa. #lactofermentation
On the left is a short jar of cauliflower with obvious signs of curry powder in the liquid. On the right is a tall jar with green and red cabbage, green onions, diced jalapeños and garlic. Both are weighted with baggies full of water so we’ll see how that goes.
Not sure how either of these will turn out because weighting things in jars that don’t have straight sides is tricky, but here are yesterday’s ferments. Curry cauliflower and a spicy coleslaw kraut. #lactofermentation

The same vegetables have been crushed into submission and into a large jar. They are covered in clear liquid which a weight holds down. A gas vent is on top of the jar.
Today in taking my stress out on vegetables, some kind of fermented cabbage, carrots, onion, garlic, ginger, bell peppers, and jalapeños. After you get out your knives you get to pound the vegetables with the stick. #lactofermentation

It’s probably a lot to ask for our New Year to be sweet, but maybe we can use some salt to at least not get it to be so very sour.

Next up, jalepeño pineapple hot sauce. This stuff ferments for 3-5 days and then makes friends with some other ingredients. It’s also meant to be holiday gifts but I’m unsure if I should do little sample cups or just a few jars. #lactofermentation #hotsauce

It’s not visible but the escabeche salad has bay leaves and smashed garlic and the pickles are sitting on a bed of fresh dill and smashed garlic.
