Taste and texture: think rare ribeye or NY strip. Maybe more towards the strip. Very mild flavor.
If they get too woody, they don’t taste good, so it’s best to harvest while young & tender.

Taking some inventory of the edible plants in my yard (yes, some invasive, I’m working to replace with natives). Today I spotted speedwell, henbit, grape hyacinth, dandelion, and creeping bellflower. #foraging #backyardforaging #edibleweeds
One of my recent adventures in life; is learning about invasive plants in my backyard and how to use them. So my battle plan is to eat (if I can) and use each one. Definitely will be an interesting challenge!
