I normally bake my sourdough in these cast iron sandwich pans I have. But, as of late, my sourdough has REALLY blown up so much so that it takes longer for my bread to bake all the way through.

So, we will try an open bake. Stay tuned for the results! 😋

Sustainable home baking. Been too productive and some of your bread has gone stale? Toast, grind and replace 5-10% (of flour) in your standard recipe with this (having soaked over night in some of the water, boiled). Improves aroma and crumb texture.

I can further confirm making bagels for a café *and* peeing myself rushing to quote Marcy and Nicole on the Sky would only work if I had more arms… which I do not. so I finished the bagels, lit nicely by late-afternoon sun

My experiments developing a mash up between GF Danish Rye and American deli pumpernickel suiting my personal preferences continues!

I’m working from a few different base recipes, sort of taking bits of them all throwing them together.
