Tempura purple sprouting with bean cassoulet & almond ricotta. For the almond ricotta, blanch whole almonds in boiling water for 5 minutes, drain and rinse. Then, pop the nuts out of their skins. Blend with salt & lemon juice, adding water incrementally until you've reached the desired consistency.

Due to warmer autumn weather, the UK broccoli crop came early & is now at its best.
