北米大陸西岸産の特産で、当地シアトルでの通称はミルガイ。宇和島屋ではグイダックの名で、活、および刺し身で通年販売しています。
グイダックの水管はこりこりした食感が良く、非常に美味ですし、寿司ネタや刺し身など、商材として欠品できない主要商品です。水管を切除し、熱湯に1～2分浸してすぐ引き上げ、外皮を手で剥いで、包丁を入れて開いてから調理します。水管以外の身肉は小さく切り、フライパンなどで焼いて、七味唐辛子をふり、醤油をかけると大変美味です。

The Pacific Geoduck is native to the coastal waters of the Seattle Puget Sound. The shell of the clam ranges from 6 in to over 8 in in length, but the extremely long siphons make the clam itself much longer than this: the "shaft" or siphons alone can be 1 meter (3 ft 3 in) in length. A superb resistance weapon.
