I am afraid I will never stop thinking about the guy on #MasterChefTheProfessionals who removed all the bones of a quail, replaced them with duck pate to reform the quail and then served up this hideous example of culinary taxidermy completely raw. #MasterChefUK

Watching #MasterchefUK. One of my vague dreams is having a private chef. How does that work? Do you tell them exactly what you want (I never really know), or do they come up with things you might like?
๐ I really like it when a chef absolutely excels. The positive feedback, and sometimes the emotion, are exceedingly memorable. But to have Wareing actually be lost for words ๐ฎ Blimey.

Hot and spicy pizza on the left. Crosta & mollica base, tomato sauce, mozzarella, pepperoni, chorizo, candied cucumber skin (brown sugar, runny honey), Stratford blue cheese, smoky jalapenos, loads of freshly ground black pepper. One on the right is sourdough base, mozzarella, extra-mature cheddar around the outside, Jerusalem artichoke, globe artichoke, pepperoni. Was supposed to be vegetarian but wifey didn't want to miss out on the pepperoni.
Excited to have some Jerusalem artichokes (sunchokes?), don't ever remember using them in my #cooking before but I saw them used effectively on #MasterchefUK recently
First effort is pizza ๐ but it only used one and we have loads of them, so they will be appearing regularly in our #food

Cooking shallots in the burger juices is nothing unusual, a lot of people do that.
Night before I did roast carrots with star anise and cardamom, because a contestant on #MasterchefUK did carrot purรฉe with star anise and cardamom and the judges really rated it
This time I tried to puree the carrot but it wouldn't blitz due to lack of liquid, so added oil and some mushroom sauce
