Italian Oyster Mushrooms are scientifically known as Pleurotus pulmonarius, and that last name can tell you a few things. Pulmonarius is of course botanical Latin and means 'Of the lungs'. It got this name because the fruiting body or cap is often the shape of a lung and this may go back to the discredited medical practice of naming plants and using them medicinally based on what part of the body they resembled. Regardless of this Italian Oysters are more delicate and cook down more than Pearl or Pink Oysters do and this makes them more desirable for inclusions in gravies and sauces.
For a surprise comparison, here we have Italian Oyster Mushrooms. These have been harvested and are sitting in a sterile harvesting box bit notice the scalloped edges to the caps? Italian oysters have a pearl like appearance and are a bit delicate. #MycelialNetwork #Fungi #ItalianOysterMushroom
The scientific name for Chestnut Mushrooms is Pholiota adiposa and is naturallt found in North America, Europe and Asia. It can be parasitic or saprotrophic and prefers Beech Trees. Chestnut Mushrooms were first described by German naturalist August Batsch in 1786 and put in as a species of Agaricus. Paul Kummer transferred it to the genus Pholiota in 1871. These mushrooms are sort of crunchy when cooked and for folks sensitive to mushrooms or the chitin they are made of large amounts can cause gastrointestinal issues. However that's not a problem I have and these are one of my favorites. See that brown 'stump' in the middle? That's what the mushrooms look like before they expand their cap. When pinning the entire cluster will look something like that.

The scientific name of these Pink Oysters is Pleurotus djamor, and These ones just came out a little bit different. But as a purveyor of many things in Fungiculture, Horticulture and Agriculture different is perfectly fine by me. We ended up taking these to market but I had to share their loveliness before they were harvested.
