On a magnetic whiteboard on the refrigerator, I have posted my menu for the work week. It is written in multicolored marker, and there is a little cow magnet on the fridge above it. It is a cute cow with a bell. The first item is an Ethiopian kale, red onion, and artichoke heart frittata. The second item is a bean stew made with good mother stollard beans, onions, carrots, pancetta, rosemary and thyme ( but not parsley and sage, please go talk to Simon and Garfunkel about that). The third item is a sweet potato casserole with pineapple, and the last item is roasted green apples. I like to roast green apples with nothing but the apples in a 425° toaster oven. They come out nice and sweet and I cut them up to put in oatmeal or cereal, or just have as a snack in the afternoon with a little yogurt or something else.
