Docโs Virginia Fired Chicken (VFC)
1 whole Fryer cut up
Dredge
1 cup AP flour (replace with additional cup of gluten free flour for Gluten free recipe)
1 cup Gluten Free Flour
1 tablespoon baking powder
1 tablespoon table salt
2 teaspoon black pepper
2 teaspoon white pepper
1 teaspoon lemon pepper
1 teaspoon MSG
1 teaspoon ground ginger
1/2 teaspoon allspice
1/2 teaspoon savory
1/2 teaspoon ground coriander
Fresh grind:
1 teaspoon peppercorns
1/2 teaspoon thyme
1/2 teaspoon marjoram
1/2 teaspoon celery seed
Marinade/batter
1 cup almond milk
1 cup IPA
1 teaspoon kosher salt
1 teaspoon curry powder
1/2 teaspoon MSG
1/4 teaspoon paprika
1/4 teaspoon savory
1/4 teaspoon white pepper
Marinate chicken parts overnight.
Drain.
Toss in flour mixture until well coated. Shake off lightly.
Fry in 370ยฐF oil 10 minutes.
Remove to a draining rack on a sheet pan.
Finish in 350ยฐF oven for 10 minutes or until internal temp is 195ยฐ.
