Me, about to take a bite of a hot dog i made for a late lunch. It's in a bun, topped with a mix of dijon mustard and sweet relish. Spoiler alert: it was deee-lish!
2 hot dogs topped with dijon mustard and sweet relish, set at right angles on a green-rimmed white plate. A clear Pyrex bowl containing baked beans, AND a spoon for shoveling them into my mouth,is also on the plate.

A diagonally cut Egg Sandwich and Hashbrown patty on a red plate, which sits on a wooden table. The sandwich, on VERY lightly toasted and buttered Canadian White Bread (so it is still pliable), contains 2 eggs, fried until their very yellow yolks are JAMMY (not drippy, not dry). Atop the eggs is American Cheese, a sausage patty and a Hashbrown patty. It's a perfect, substantial brunch meal. 2 meals a day after copious AM coffee, is ONE way I afford my existence AT PRESENT. I'm an extremely frugal person, BY NECESSITY, but am running out of ways to cut spending! Started to write a song about it. Wanna hear it? here it goes! How do you trim more when the scissors were hocked just to pay for the gas to get to the store!? Ok, enough alt text ruminating... have a fantastic afternoon! Best, Cheryl

3 teenytiny burritos I air fried...so now they're teenytiny chimichangas. They're filled with cooked ground beef, sauteed mushroom, onion and garlic mix i had leftover from shepherd's pie making. I added garlic confit, diced mozzarella, herbs and spices. Corn tortillas.
Mozzarella being stretched. with the few *re-leftover* leftover tortillas i made mozzarella taquitos, ooey and gooey.

Made 2 sm. casseroles, 1 for frzr, had ±1cup BeefMix left. 🤔

Been thinkin too much bout shep's pie since @chefhoss.bsky.social made it a bit ago. SO, chopped&sauteed onion+garl, added chopped #shrooms, 2 big burgers, mashed last3 taters w roasted garlic,butter+splash o'½+½.

A delectable bite of my baked stuffed tomato, held up by a fork that, seconds later, made a beeline for my mouth!
The crusty crispy overflow stuffing, scooped from the bottom of the casserole. It is darker brown in color, as it sorta fried in the garlic oil as the tomato baked.... which adds a nice crunch element. And only a few zillion calories. Worth it, worth it!

The mix contains 2 eggs in 2 lb Ricotta, romano, mozz, nutmeg, garlic powder s+p, chopped sauteed spinach+mushrooms.
Added eq.part flour, rolled and cut. Yay

-Threw em in a pan for a bit, heated just2fragrance
-Added a nice glug o'smoked maple syrup+ knob o butter +vanilla after bubblin a bit. Cooled.
