I made gluten free English Muffins today for tonight's Welsh Rarebit. I like bacon and tomato on my toasted muffin topped with beer cheese sauce. Hubs likes egg instead of the tomato.

Welsh Rarebit- a mixture of Cheddar cheese, Colman’s Mustard Powder, butter, brown ale and Worcestershire sauce packed onto slices of bread and run under the broiler for a few minutes.

We have Welsh Rabbit for dinner every Christmas Eve. This NYT recipe is very easy and not as messy as others. The Chowning Tavern in Colonial Williamsburg serves the best I have ever eaten. (See comments)
