I followed the recipes for extra coconut cake and salty vanilla frosting by #alisonroman. Wonderful. I love the flavour of coconut, & this cake delivers on that, using flaked coconut in the moist, dense layer cakes & toasted coconut chips to adorn the frosting. The cake went down a treat at work. 🍰

I forgot to mention the last few times I made it I’ve ate it over a bed of jasmine rice. It’s delicious. I cook and store the rice separately.
I added curry and I’ll top off my bowl with cilantro in addition to mint! The soup is delicious as is without any modifications too #TheStew #AlisonRoman
