a large aluminium baking pan with the bottom lined with an additional 1/4" aluminium slab covering the entire area of the bottom for thermal mass, sitting on a rack in bottom position below the baguette rack in middle position. throw water onto this after putting in the loaves to cook and it's steam pretty much instantly.
Really through all this the revolutionary thing is ditching the ice cubes in favour of pre-boiled so still-very-hot water and throwing _that_ onto a high-thermal-reserve pan
crusts got dramatically more interesting as soon as I did that and i'm never going back
