A recipe for Gluten Free spiced banana sweet bread
GF two banana sweet bread
2 very ripe bananas
2 large chicken eggs
1 cup half and half
1 packet yeast in ¼ cup warm water
1 tsp vanilla extract
4 tbsp butter melted, not hot
1 cup powdered sugar
3 cups (360 g) King Arthur Gluten Free 1:1
2 tbsp baking powder
Dash of nutmeg, mace, clove, & salt to taste
1 tsp of cinnamon
Prepare yeast with ¼ cup hot tap water with a pinch of sugar, set aside
Blend liquid ingredients well in blender until foamy
Using a standmixer, pour liquid into mixing bowl
Pour all dry ingredients into mixing bowl
Add yeast and low temp melted butter
Lower the paddle attachment, start mixing slow until dry ingredients are blended, scrape sides of the bowl, then mix on medium for about 5 mins
Pour or spoon the batter in crisco coated bread pan with at least 3 times height of batter pour to container side height, let it settle itself, do not spread.
Cover and let rise in pan for 2 hours at warm room temperature. Be careful not to let anything touch the top of the rising dough, it will deflate.
Cook at 350°F for 30-45 mins depending on batter thickness in pans. Over cooking slightly is better, the crust will soften as it cools.
Remove when top is solid and caramel brown remove from pan and transfer to cooling rack
