There is a sandbar in the WI River with a huge old Oak tree where the Bald Eagles like to hang out. It's leaning quite a bit, so I don't know how many more years it has. The sand isn't the greatest base, but it grew very tall in the middle if the river.

Jim Crouch spoke about the Oak Project and showed about 20 people how to plant and raise seedlings Saturday at the Pamo Valley Winery tasting room in Ramona on Saturday. Seedlings of several species were available - for free. Some attendees also used provided soil to pot their own. #trees #oaks

Branching out: Residents of Aguanga in Riverside County have asked for help from The Oak Project. And founder Jim Crouch did a demonstration on Saturday at Southwestern College in Chula Vista, where dozens of people potted sprouting acorns and learned about our oak restoration efforts. #trees #oaks

The Wild Harvest Digest: January 2026, #1

Happy New Year’s Neighbors,

	To ring in the New Year’s properly, we are going to talk about a plant that can be seen all over Fayetteville but is most distinctive in plantings arranged by our Local Parks and Recreation Department. Today’s plant is a tree and an especially nice looking one that you can admire at the Transportation Museum as there are three on the premises all in a line facing Franklin Street. The tree in question is called a Scarlet Oak (Quercus coccinea) but sometimes it is also called a Black Oak. Oddly the botanical latin name of this street tree only reflects the first name as the latin word coccinea means ‘scarlet’. The latin word ‘Quercus’ just means Oak and is said to have been derived from the Proto-Indo-European word ‘kwerkwu’. Interestingly, Oaks are a genus of hardwood trees or shrubs under the Beech Family (Fagaceae). Generally speaking Oaks are considered a keystone species and as such they can be found in a large number of habitats naturally or through the actions of human beings. Additionally Oaks also live in association with numerous types of fungi such as Truffles, but also Lion’s Mane. Oaks as a species support almost a thousand species of Caterpillar and are a host to numerous types of Gall Wasps. The leaves of most oaks contain enough tannin to be toxic to a lot of cattle however pigs can eat them without issue.The most well-known use of Oak wood is in casks for alcohol, furniture, and Cork. For those who are interested, Cork Oak (Quercus suber) is the main source of natural cork in the world. The sponge-like outer bark is harvested every 9-12 years without doing any damage to the tree and this is a reasonably sustainable industry.

But anyway back to Scarlet Oaks, which are a pretty impressive tree for use in parks and greens paces but are not a good street tree for urban areas. Scarlet Oaks are fast growing by oak tree standards, and they tolerate dry soils, urban pollution and they prefer acidic soil. But because they do produce fair sized surface roots, and their root flare can easily heave curbs and sidewalks they are not the best tree for restricted tree pits in the urban landscape. The real value of a Scarlet Oak is its stately form as a tree in a green space like a park or as part of a building’s green foot print where they can develop fully. Allowed to do their thing a six inch diameter tree can uptake something like 150 gallons of water that otherwise might flood your basement in a downpour. A two foot diameter tree can take on three-hundred gallons and a very mature tree can take on eleven thousand gallons of water in a season. This is all according to the NC Department of Forestry and all good reasons for having something like a Scarlet Oak in your landscaping plan. Additionally these trees also prevent wind damage by breaking up strong gusts of wind that might otherwise rip away your roofing shingles or do other damage.

Those leaves when they finally fall in late autumn or in winter are excellent compost fuel as the leaves of hardwood trees take a bit longer to break down but the decomposers in your compost bin or garden beds will love them. Then there’s the fall-winter color as Scarlet Oaks are no slough in their pretty red color even if they often color up late in the season in our area. The late autumn color often carries into Christmas making these trees extra festive. But the second trick these trees have for you is their Acorns. You can extract Tannin from the leaves and accords which is an essential compound if you are planning to tan leather naturally.

In autumn if you gather acorns as they turn brown you should either store them in a cool dry place for later or shell immediately for use. If you need to use them immediately, place whole, chopped or coarsely ground nut meats in a cloth like a clean t-shirt, and tie it with a string. Place this in boiling water until the water turns brown, then drain the water, and add more and repeat the process until the water stays clear. This funny colored water is full of tannins and can be used for leather tanning projects. Alternately you can place the bag in a stream so it’s constantly wet and wait a t least a day possibly several until the nuts are no longer bitter. From here you can dry them, crush them finely to make Acorn Flour, or crush them coarsely so the chunks are of even size and make something akin to Grits. Or you can roast them and eat them as a trail mix sort of snack. There are tons of recipes for making breads with Acorns, failing that there are several companies that make Acorn flour so you can work out recipes without all the grunt work.  One last thing before I bring this article to a close, Acorn Flour is gluten-free, so this stuff has only one downside and  below is a link to the nutritional value of Acorns.
