The picture shows a home made dish of a traditional Irish stew called Coddle made in my kitchen here in Ireland. The bowl of food is centre frame upon a black kitchen work top. The rest of the kitchen is in soft focus to emphasise the main dish. The picture is in colour with various food colours of which are described below. The picture is finished off with a thin white border frame. What is Coddle? Essentially it is a clear stew with meat and vegetables that is left to boil for numerous hours until the vegetables and meat are soft and tender. Ingredients are typically chunks of bacon, sausages, potatoes, onions and carrots which are seasoned and water added. I have added a finishing garnish of fresh garden grow parsley on this example. Served as hearty and heart warming dish as seen here on its own or with additional crusty bread, it is a well loved Irish classic for the colder seasons.

A recipe for a West Cork Coddle, which is an outrageous variant on what traditional coddle should be (yes I know there is no true authentic recipe). It contains chicken, black and white pudding and all sorts of quare gambo. And unbelievably is suggested as a Valentine’s Day dinner!!!
